I like to use pecarino-romano or parmigiano-reggiano, but I have had them made with gruyere and the classic sharp cheddar.
I like to use a Gruyere cheese and find it goes well with spaghetti squash.
From Territet there is a mountain railway past Glion and Caux nearly to the top of the Rochers de Naye (6710 ft.), while from Vernex the MontreuxBernese-Oberland railway mounts past Les Avants, pierces the ridge of the Col de Jaman by a tunnel, and so reaches (14 m.) Montbovon in the Gruyere portion of the upper Sarine valley.
Other entrees include seared duck breast with a sweet potato goat cheese and prosciutto puree, sea scallops in a white cheddar risotto and a wild mushroom orzo with melted Gruyere and white truffle oil.
Fondue features on the dinner menu both as an entree (Gruyere cheese, white wine and shallots served with croutons) and as a dessert (dark Belgian chocolate served with an assortment of fruits).
