in·ver·tase (ĭn-vûrˈtāsˌ, ĭnˈvər-tāsˌ, -tāzˌ)
noun An enzyme that catalyzes the hydrolysis of sucrose into glucose and fructose. Also called beta-fructofuranosidase, invertin, saccharase, sucrase.
