Does anyone know the word for a book, in which a person writes excerpts of other people’s writings that they like?  Possibly a 19th-century thing.  Is it day book?

I’d just call it a notebook….

Plagiarism? (or "copyright theft" if you are of a litigious nature)

I would say "quotes-book". By the way, there is the word gnomology, which is "a collection of, or a treatise on, maxims, grave sentences, or reflections."

How about anthology - a collection of selected literary pieces or passages.

It may be a chrestomathy:

1. A selection of literary passages, usually by one author.
2. An anthology used in studying a language.

I have seen the term applied to collections by many authors.
